Vegan Apple Crisp

One of the most quintessential fall desserts, this vegan apple crisp is an aromatic fusion of fresh apples, cinnamon, and chewy oats with a touch of sweetness.

One of our most favorite fall pastimes is apple picking. The cool crisp air paired with the ever-changing beauty of multi-colored trees and a warm sun is truly a sight to see in beautiful New England. However, you need to have a rolodex of recipes in order to use up all the bushels of apples you pick! Thus, vegan apple crisp! This one should definitely be in the rotation.

The Ingredients

The apples. The perfect vegan apple crisp would have a balance of tart and sweet apples. For example, half granny smith and half honey crisp, to help balance out the tartness and sweetness. However, you can use whichever apples you have on hand. I haven’t met an apple that didn’t make a fine apple crisp!

The sugar. Most refined sugars are not vegan as they are filtered through bone char. If that’s not something that is important to you, you can use regular cane sugar or brown sugar or a mixture of both!

For a vegan option, find a vegan cane sugar or you can also use coconut sugar which works just as well.

The crumble. Several recipes just use regular white flour. We’re using a combination of flour and oats to give it a chewy texture (with a little bit of extra healthfulness!). As with many of my recipes, I tend to opt for whole wheat flour instead of refined white flour. Whole wheat flour retains more of it’s nutrient density.

Nuts. This recipe uses pecans or walnuts but for a nut allergy, these can be omitted.

Butter. For vegan butter, we love to use the Earth Balance brand. It behaves very much like dairy butter and it tastes delicious.

I tend to shy away from coconut oil because of the negative health effects from the saturated fat content. Also, I find that coconut oil has a particularly strong taste. If coconut oil if your preferred choice, you can use it as a substitute in a 1:1 ratio.

Spices. Most of the time, a simple touch of cinnamon will do. If you really want to get creative and “spicy” with the flavor, you can also opt to add in a pinch of ground nutmeg and ground cloves.

Apple crisp is the perfect dessert for a night at home or for a holiday/party. For family get togethers, I’ve split the mixture and toppings into individual sized ramekins and served at Thanksgiving. Or you can bake it in an oven-safe 9X12 pan like the one pictured in this post.

Ingredients
  

Filling

  • 8-10 apples peeled and diced into cubes
  • 2 tbsp flour
  • 2 tbsp sugar
  • 1.5 tsp cinnamon
  • 1/4 tsp ground cloves optional
  • 1/4 tsp ground nutmeg optional

Topping

  • 1 cup flour
  • 1 cup rolled oats
  • 1/3 cup sugar
  • 1/2 cup melted butter
  • 1/2 cup chopped pecans or walnuts

Instructions
 

  • Preheat the oven to 350.
  • Peel and dice the apples. Add them to the oven-safe pan.
  • Add 2 tbsp flour, 2 tbsp sugar, and cinnamon to the apples. Mix until combined.
  • In a separate mixing bowl, combine 1 cup flour, 1 cup rolled oats, 1/3 cup sugar, pecans and melted butter. Mix until combined.
  • Spread the topping in an even layer over the apples with a spatula.
  • Bake in the oven at 350 uncovered for 45-60 minutes or until the top is a golden brown..
