Fresh Authentic Guacamole

Whenever we are going somewhere and we ask our hosts what they want us to bring over, they ALWAYS request Rob’s fresh authentic guacamole. Not joking! This is my most famous recipe and it’s not even mine HA! – it’s my hubby’s (ok i guess that makes it mine too 😉 ).

In all seriousness, we have tried dozens of Mexican restaurants and tons of market guacs and NONE compare to Rob’s. The closest we have come to is the Whole Foods brand but even still, we have to make some modifications. Whenever we host or attend a get-together or holiday, everyone always asks us to bring the guac!

Why Rob’s recipe?

Why is Rob’s so perfect? It has the right blend of flavors with no missing components. I know, I know – everyone’s taste buds are different but some things have surprised me in the past! Once, we ordered guacamole at a restaurant and there was no lime juice. Another time, there were no tomatoes.

Considering guacamole is one of my favorite foods on planet Earth, we’ve become very picky with our recipe. Over the years, one of the changes we have made is to roast the garlic rather than tossing it in raw. Depending on the clove, sometimes raw garlic can be overpowering and can bother some sensitive tummies, like mine.

Buttery avocados. The bite of the onion. The smokiness from the roasted garlic. Zest from the lime. They all fuse together to create this perfect spread.

Kindness does exist

Every time I make guacamole, I think about the heartwarming incident at this Mexican restaurant a few years back. My husband and I were sitting at the bar, ordering dinner and enjoying some margaritas. The waiter rolled the bar cart over and proceeded to slice and dice, making fresh guacamole on the spot. He mashed the avocados in a Mexican mortar and pestle set called a Molcajete. I said out loud to my husband, “That is so cool! I would love one of those.”

The lonely gentleman next to us smiled and leaned over to chat with us. We spent the evening sharing a drink and laughing together. At the end of the night, the stranger rose to leave and the bartender delivered my husband and I a brand new molcajete, a gift from our departing friend.

My friend, if you are out there reading this, I still have the molcajete and I still use it for our guacamole! Thank you! There you have it – why I always smile when I make guacamole.

Fresh Authentic Guacamole

An authentic Mexican appetizer, this fresh guacamole is fused with buttery avocados, tangy lime and zesty chili powder. We dare you to put the chip down.

Servings 2 cups

Ingredients
  

  • 3 large ripe avocados, pitted
  • 2 cloves roasted garlic
  • 1/4 red onion, diced
  • 1/2 cup diced tomatoes
  • 1 lime, juiced
  • 1 tbsp chopped fresh cilantro
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • salt, to taste
  • finely diced fresh jalapeno optional

Instructions
 

  • Roast the garlic in the toaster oven or oven. If you don't need it roasted, you can just mince it raw.
  • Pit the avocado and scoop it out of the shell. Put that in a medium bowl.
  • Squeeze the lime and add the juice to the avocado. Mash to your desired consistency. (Some people like creamy guac and some like a chunky guac. We do a happy medium.).
  • Dice the onion, tomato and cilantro and add to the bowl. Add the spices. Mix with a spoon or spatula until well incorporated.

Notes

If you aren’t planning on serving it right away, keep the pit and add it to your guacamole. Store it covered in the fridge with a tight seal to prevent oxidization.
