6 Layer Loaded Taco Cups

Loaded tacos in a cup for dipping, dumping or scooping! Six layers of flavor: chili dusted seitan, beans, sweet corn, tangy guacamole, vegan cheese and homemade pico de gallo!

If you love tacos, then you’ll love these 6 Layer Loaded Taco Cups. This recipe was originally designed to be a layered dip in a big dish but with Coronavirus rearing it’s ugly head, I redesigned this appetizer to individual sized cups that are safe and fun!

These tacos cups are six layers of plant-based, delicious and filling ingredients that meld together beautifully in a palette of taste that’s tangy, sweet, spicy and buttery, all in one spoonful!

Eat with a spoon. Scoop it with a tortilla chip. Or dump it over a bowl of rice.

The Layers

  1. Seitan. Seitan is a a wonderful high protein ingredient made from vital wheat gluten. It has a similar chewy texture to meat and it takes seasonings very well. If you’re gluten-free, you can skip this altogether since the next layer (beans) has protein as well!
  2. Black beans. Black beans are a quintessential ingredient, in my book, for manufacturing Mexican-inspired dishes. We’re using black beans but you can use pinto, red kidney or any other bean that suits your tastes.
  3. Corn. The middle layer is made up of wonderfully sweet corn that adds another dimension of flavor. You can used canned or frozen.
  4. Guacamole. Guacamole is the next buttery layer. You can use store-bought or if you really want to enhance the flavor, try our guacamole – our recipe is here!
  5. Vegan cheese. Our next layer is shredded vegan cheese. Our current go-to brand is the shredded cheddar from Violife but we’re happy to say that the vegan cheese market is growing and evolving!
  6. Pico de gallo. The top layer is the tangy (maybe spicy if you like heat) layer of these taco cups. We love using the Whole Foods brand of pico de gallo but pico can be made easily at home (fresh tomatoes, onions, cilantro, japaleno and vinegar or lime juice).

These taco cups are perfect for all sorts of occasions: birthday parties, Super bowl or sports gatherings, holidays, and more. Hopefully Coronavirus goes away so that we can get back to getting together but in the meantime, feel free to eat these cups for lunch and dinner!

The Ingredients + Amounts

To make six 6-8oz taco cups, you’ll need roughly:
– two packages of seitan
– one 15oz can of beans
– two cups of corn
– one cup of vegan cheese
– one cup of guacamole
– one cup of pico de gallo

For the seitan, simply sauté it in a skillet for no more than 3-4 minutes with chili powder or Mexican Fiesta Seasoning.

With the corn, simply blanch it until softened and warm.
