Double Chocolate Chip Vegan Pancakes

Who knew breakfast could be so fun and lavish? Let me introduce you to these rich and decadent double chocolate chip pancakes that are totally plant-based and off-the-charts chocolaty.

Some days, you just want dessert for breakfast. You want something mouthwatering, fun, rich, and lavish. Hit that craving and then get back to the normal swing of things. When I get that craving, I’m always down for some double chocolate chip vegan pancakes. My kids couldn’t believe that this was “breakfast”. My daughter’s eyes were round as as saucers when I put her stack of chocolaty pancakes before her and she said “Chocolate for breakfast?”

Yassss, my sweet girl, but not just for you; for mama too! 😉

It’s crazy; the older I have gotten, the more I have gravitated away from super sweet things. Am I alone here? As a kid, I would choose the thickest, most dense and rich piece of chocolate cake and crush the whole thing single-handedly! Now, I much prefer a piece of fruit or a small piece of a dark chocolate vegan chocolate bar. Maybe it’s getting older or maybe it’s having a way of eating that is very low in sugar — or maybe it’s both!

Eating guilt-free ..

Anyone else feel guilty about their health and fitness when you’re eating pancakes out at a diner somewhere? I did! As I’ve mentioned in other blog posts, pancakes are usually made with processed flours and dairy products.

These pancakes are made with whole wheat flour. Wheat gets a pretty bad rap because it’s typically stripped and bleached of all its nutrients. With whole wheat, we’re staying closer to the whole grain, keeping the fiber, and locking in more of those vitamins and minerals.

Pile in the fresh banana, flax eggs and apple cider vinegar, this is a recipe you can feel good about eating.

Toppings:

There are various ingredients that you can use to add additional flavor and texture to pancakes.

  1. Fresh fruit (berries, bananas, peaches)
  2. Nuts (walnuts, pecans, slivered almonds)
  3. Seeds (hemp, pumpkin, sunflower)
  4. Nut butters (peanut, almond, cashew)
  5. Shredded Coconut
  6. Maple or Date Syrup

Our favorite combination is fresh berries with shredded coconut, pecans, pumpkin seeds and maple syrup! It adds so much crunch to the fluffy soft pancakes.

Double Chocolate Chip Vegan Pancakes

Ingredients
  

  • 1 1/3 cup flour white or whole wheat
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 2 flax eggs
  • 2 tsp apple cider vinegar
  • 1 tsp vanilla
  • 1 banana, mashed
  • 1 1/2 cups plant milk
  • 2 tbsp maple syrup
  • 1/2 cup chocolate chips

Instructions
 

  • Prepare your flax eggs.
  • In a medium mixing bowl, combine the dry ingredients and mix until incorporated. ⁣
  • In a large bowl, mash the banana. Then add your wet ingredients, including the flax eggs. ⁣
  • Add dry ingredients to wet, stirring well to incorporate. ⁣
  • Fold in chocolate chips.
  • Pour batter into 2-3” circles on a heated and greased skillet. I use vegan butter to get a crispy edge. Keep heat on medium low. About a minute on each side. ⁣⁣
  • Top and serve!

Notes

To prepare a flax egg, mix 1 tablespoon of ground flax meal with 2.5 tablespoons of water. Let sit and thicken for 5-10 minutes.
