Double Chocolate Chip Vegan Pancakes

- 1 1/3 cup flour white or whole wheat
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of salt
- 2 flax eggs
- 2 tsp apple cider vinegar
- 1 tsp vanilla
- 1 banana, mashed
- 1 1/2 cups plant milk
- 2 tbsp maple syrup
- 1/2 cup chocolate chips
Prepare your flax eggs.
In a medium mixing bowl, combine the dry ingredients and mix until incorporated.
In a large bowl, mash the banana. Then add your wet ingredients, including the flax eggs.
Add dry ingredients to wet, stirring well to incorporate.
Fold in chocolate chips.
Pour batter into 2-3” circles on a heated and greased skillet. I use vegan butter to get a crispy edge. Keep heat on medium low. About a minute on each side.
Top and serve!
To prepare a flax egg, mix 1 tablespoon of ground flax meal with 2.5 tablespoons of water. Let sit and thicken for 5-10 minutes.
