The Ingredients

The main ingredients of this salad are broccoli slaw and chickpeas. Most grocery stores sell a pre-bagged bag of broccoli slaw (shaved raw broccoli and carrot). You could totally make it yourself but if you’re looking for quick and easy, I highly recommend just buying it. In addition to pre-shaved broccoli slaw, I’m using canned chickpeas. I did say I love quick and easy meals right?! Ha! If you’re interested in using cooked chickpeas from scratch, then by all means, you’re welcome to do so! I personally find canned beans so easy and fast and there are few recipes that truly require dried beans.

In addition to the broccoli and chickpeas, we’re got crunchy fresh bell pepper, snap peas, red onions and almonds. For the fresh, aromatic additions, we’re using cilantro and mandarins. If you’re allergic to tree nuts, you can remove the almonds altogether or you could considering substituting with sunflower or pumpkin seeds to keep that crunch.

The dressing in this crunchy healthy broccoli chickpea salad is just as simple with sesame oil, lime juice, maple syrup, salt and pepper, and a pinch of ground ginger.

Ingredients
  

Salad

  • 3 cups broccoli slaw
  • 1 15oz can of chickpeas drained and rinsed
  • 1/2 cup chopped snap peas
  • 1/3 cup diced red onions
  • 1/3 cup sliced almonds
  • 1/2 cup fresh cilantro leaves
  • 2-3 mandarins peeled and separated

Sesame Lime Dressing

  • 4 tbsp sesame oil
  • juice of 1 lime
  • 2 tbsp maple syrup
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp ground ginger

Toppings

  • 1 avocado sliced or cubed
  • sesame seeds

Instructions
 

  • Drain and thoroughly rinse the can of chickpeas.
  • While the chickpeas are drying, prepare and chop the bell pepper, onion, snap peas, cilantro and mandarins.
  • Add all the ingredients to a big bowl.
  • In a separate small bowl, whisk all the ingredients for the dressing.
  • Pour the dressing over the broccoli chickpea salad and mix until well incorporated.
  • Top with fresh avocado and sesame seeds.
