Crunchy Healthy Broccoli Chickpea Salad

This crunchy healthy broccoli chickpea salad is packed with beans, fruit and veggies for an uber healthy salad that's quick, easy, and lovingly lathered in sesame lime dressing. This no-cook salad is perfect for any meal, whether you make at home or bring to a cookout!

Ingredients
  

Salad

  • 3 cups broccoli slaw
  • 1 15oz can of chickpeas drained and rinsed
  • 1/2 cup chopped snap peas
  • 1/3 cup diced red onions
  • 1/3 cup sliced almonds
  • 1/2 cup fresh cilantro leaves
  • 2-3 mandarins peeled and separated

Sesame Lime Dressing

  • 4 tbsp sesame oil
  • juice of 1 lime
  • 2 tbsp maple syrup
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp ground ginger

Toppings

  • 1 avocado sliced or cubed
  • sesame seeds

Instructions
 

  • Drain and thoroughly rinse the can of chickpeas.
  • While the chickpeas are drying, prepare and chop the bell pepper, onion, snap peas, cilantro and mandarins.
  • Add all the ingredients to a big bowl.
  • In a separate small bowl, whisk all the ingredients for the dressing.
  • Pour the dressing over the broccoli chickpea salad and mix until well incorporated.
  • Top with fresh avocado and sesame seeds.
