As many bloggers do, I was preparing for the NFL Superbowl a couple of weeks ago and I was thinking about fun, plant-based game day appetizers. One thing I get messaged about frequently is when you guys say that it’s much easier to stay plant-based in the safety of your own home when it’s just you and your routine. But what happens when something (let’s say an event like the Super Bowl) pops up and suddenly your routine is out of whack?

The truth is: nothing happens if you’ve planned for it! In 2020, almost any food or cuisine can be recreated in a plant-based way even though I specifically advise not trying to substitute meat. In my opinion, meat is meat and there’s no true substitute. Instead of looking for a substitute and likely getting disappointed, retrain your palette to savor and enjoy other flavors. Treasure the freshness of a new lifestyle with new tastes until they become savored and familiar favorites.

When you’re getting together with friends (especially at your place), it’s such an awesome opportunity to loop everyone into a plant-based lifestyle (even if only for the evening!). It’s good for our health, for the environment and for the animals.

In my game day line up, I prepared popular favorites like buffalo cauliflower, black bean nachos, a vegan charcuterie board. At the last minute, I simply had to throw these BBQ pulled mushroom sliders on the list because they are just too dang good and easy.

The BBQ sauce is tangy and slightly sweet. The sautéed onions and garlic leak their pungent flavors. The mushrooms are chewy like pulled pork and just soak up the flavor of the BBQ sauce. The best part is that this BBQ Pulled Mushroom filling can go on anything. You can heap it onto pizza. Stuff it into quesadillas. Load them up into sliders! Fajitas. Burritos. The possibilities are endless!

BBQ Pulled Mushroom Sliders

Ingredients
  

  • 1 3.5oz package of enoki mushrooms
  • 4 tbsp BBQ sauce
  • 1/2 large onion, diced
  • 2-3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1/3 cup veggie broth
  • slider buns

Optional Additions

  • cole slaw
  • vegan cheese slices

Instructions
 

  • Rinse the enoki mushrooms and then gently pull apart into individual strings.
  • Dice up the onion and garlic and add to a skillet. Sautee over medium heat with olive oil until translucent.
  • Add the BBQ sauce and veggie broth and mix well.
  • Add the enoki mushrooms and mix until well incorporated. Simmer on medium-low heat until the sauce has thickened and the veggie broth has reduced. This should only take a few minutes. The sauce should be thick, not runny.

Notes

If you are vegan, carefully read the ingredient label on the bottle of BBQ sauce. Many condiments are flavored with beef bone broth.
