Vegan Apple Cider Pancakes

Thick and fluffy, these vegan apple cider pancakes are made from the simplest of ingredients while channeling all the fall apple vibes.

My family is into all of the apple things this year and I knew I had to bust out these vegan apple cider pancakes. The apple cider is light and delicate but becomes more apparent with every bite. These pancakes are thick and fluffy and the perfect texture!

The Ingredients

The flour. As I’ve mentioned before on The Whole Scoop, I don’t have a gluten sensitivity so I don’t avoid it. However, if given the chance, I will almost always choose whole wheat flour over white flour because of the better retention of nutrients. Whole wheat flour retains more of its protein, fiber, and vitamins and minerals than white flour.

The apples. For a well-rounded and integrated apple flavor, we’re using locally brewed apple cider and apple sauce. The fragrant and delicately sweet cider creates the base of the flavor. The apple sauce also adds to the flavor but furthermore, it acts as a binder! Natural pectin in apples is the binding agent which helps keep our pancakes together.

We’re enhancing the flavor just a touch more with maple syrup, vanilla and cinnamon: the true embodiment of fall, no?

All you’ll need is two bowls, a whisk, spatula, some measuring cups and spoons, a griddle and perhaps, a pancake batter dispenser!

I’ve cycled through so many griddles and my favorite is the Greenpan griddle. It’s non-stick but environmentally and health friendly.

Toppings

I topped off these apple cider pancakes with nothing other than …. more apples! Behold deliciously soft caramelized apple chunks. However, the topping choices are endless.

  1. Fresh fruit (berries, bananas, peaches)
  2. Nuts (walnuts, pecans, slivered almonds)
  3. Seeds (hemp, pumpkin, sunflower)
  4. Nut butters (peanut, almond, cashew)
  5. Shredded Coconut
  6. Maple or Date Syrup

Our favorite combination is fresh berries, pecans, pumpkin seeds and maple syrup! It adds so much crunch to the fluffy soft pancakes.

Vegan Apple Cider Pancakes

Ingredients
  

  • 1 3/4 cup whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/4 cup apple cider
  • 1/4 cup plant milk
  • 1/4 cup + 3 tbsp apple sauce
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tsp apple cider vinegar

Caramelized Apples

  • 1 large apple diced into cubes
  • 2 tbsp water
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon

Instructions
 

  • In a large bowl, combine all of the wet ingredients.
  • In a separate medium bowl, combine all the dry ingredients.
  • Add the dry ingredients to the wet, 1/3 portion at a time and whisk in until just combined. Don't overmix.
  • Heat the griddle or medium heat.
  • Add a sliver of vegan butter or spray with cooking spray, reduce heat to medium-low, and then pour the batter in 2 inch circles. Cook about a minute on each side.
  • Serve and top!

Caramelized Apples

  • Dice the apples into small cubes.
  • Simmer the apples in the water in a small saucepan until softened and most of the water has been evaporated.
  • Add the maple syrup and cinnamon. Sauté for a minute or two until caramelized. Pour over pancakes.
