In a large bowl, combine all of the wet ingredients.
In a separate medium bowl, combine all the dry ingredients.
Add the dry ingredients to the wet, 1/3 portion at a time and whisk in until just combined. Don't overmix.
Heat the griddle or medium heat.
Add a sliver of vegan butter or spray with cooking spray, reduce heat to medium-low, and then pour the batter in 2 inch circles. Cook about a minute on each side.
Serve and top!
Caramelized Apples
Dice the apples into small cubes.
Simmer the apples in the water in a small saucepan until softened and most of the water has been evaporated.
