These vegan overnight oats have been a total lifesaver. I’m a creature of habit and for the longest time, I’ve been eating hot and freshly made steel cut oats. But as life gets busier, it seems like my window to make and actually eat breakfast keeps shrinking. I’ve got to get to the gym or I have to get the kids up, teeth brushed, dressed, lunches packed and everyone out the door for school! Sound familiar?
So now I have less time to make my wonderful steel cut oats, even less time to eat them. If you’re like me, then you believe that breakfast is one of the most important meals of the day – fueling you for the big day ahead. Safe to say, I get very grumpy if I miss breakfast!
Lo and behold, overnight oats! They are super easy to throw together, they’re filling, they require no cooking, there are a ton of customizations in terms of flavor and oh yeah, did I mention NO COOKING? You can take them right out of the refrigerator or you can take on the go! I use them as a breakfast option but my hubby will often grab them as a post workout snack, too.
Honestly, you guys, I’m not sure why I haven’t done overnight oats sooner! These are a game changer. The best part is that they’re so easy and quick – I can make a whole week’s worth in under 5 minutes.
Customization
Friends, there are so many options with overnight oats! You can add them all in when you make your oats the night before or you can top the next day.
Here are some ideas for added flavor:
1. Nut butter: peanut butter, almond butter, cashew butter
2. Nuts: pecans, walnuts, hazelnuts, almonds, pistachios
3. Seeds: flax seeds, hemp seed, sunflower seeds, pumpkin seeds
4. Fruit: bananas, strawberries, blueberries, diced apples or pears, shredded coconut
5. A drizzle of date syrup or maple syrup
6. Granola
7. Chocolate Chips
8. Spices: cinnamon, nutmeg, turmeric, etc
As you can see, there are so many fun ways to customize and make flavorful combinations to this simple yet filling breakfast option.
Vegan Overnight Oats
Equipment
- 8 ounce mason jar
Ingredients
- 1/3 cup rolled oats
- 2/3 cup plant milk
- 1 tsp chia seeds
- 1 tsp ground flax seeds (optional)
- 1 tsp hemp seeds (optional)
- 1 tbsp maple syrup
- 1/3 tsp cinnamon
Instructions
- Add all ingredients to a jar/glass with a lid.
- Shake well so that everything is incorporated.
- Refrigerate overnight or minimum of 3 hours.
